Happy Sunday, friends.
Six services left at República.
Tonight, and then next week in its entirety. That’s it.
A few seats opened up tonight. If you’re reading this in real time, stop what you’re doing and book it. Because what’s happening inside those four walls right now isn’t a farewell tour. It isn’t nostalgia. It’s a return; back to intention, back to narrative, back to the pulse of what this place was always meant to be.
If you’re wondering why the format is different today (shorter), I will tell you —República is kicking my ass. As it should. I’m giving you everything — every service, every plate, every ounce of voice I have left. I’ll be writing about these final days as we move through them. Keep coming back. That’s where you’ll find it.
After this, we breathe. And then we build.
WHAT WE’VE BEEN MAKING
While República has had my full attention, the rest of TODOS hasn’t stopped. Here’s what’s been published this week.
Memorable — Episode 1: Foundation (Between Courses) In 2022, five people with cameras, no distribution plan, and total belief flew to Oaxaca to shoot a documentary series. No producer. No roadmap. Just the conviction that the story mattered. Three years later, it’s winning film festivals. This is where it started. Read it →
Singing Scallops With Pear Granita (Cocina Noroeste) Chef Juan Gomez on the ingredient he loves more than oysters — hand-harvested by divers in Alaska, available for exactly two weeks a year, and currently on the menu at Lilia Comedor. An Anjou pear granita from Kiyokawa Farms. Serrano kosho made from salted summer chiles. Olive oil caviar on top. This is what intentional cooking looks like. Read it →
Here’s to Ritchie (Curada) On Ritchie Valens, the Mexican-American hyphen, and the future we never got to see. He was seventeen years old when the plane went down. The first rock star from the West Coast. A kid from Pacoima who recorded La Bamba phonetically and didn’t apologize for any of it. This is one I’ve been wanting to write for a long time. Read it →
WHILE YOU’RE HERE
Portland Dining Month is happening and I want you at Lilia Comedor. The same Chef Juan Gomez writing about singing scallops above is the one in that kitchen every night — and the Dining Month special extends to Comala as well. Go. Sit at the bar. Pay attention.
And if you haven’t watched Her Way yet — our filmed series on women in wine, shot in Sonoma, Napa, and the Gorge — we need you watching, subscribing, and telling your friends. Three more episodes to go if we can raise the funds. The media is good. I promise you.
Six services left.
Book the reservation. Support Lilia. Watch Her Way. Stay with us.
Con todo, menos con miedo.
